Bring Italy to the Desert: Easy Pasta & Pizza Nights at JT Trading Post

Joshua Tree and Italy don't have much in common at first glance — one's all rugged rock formations and wide-open sky, the other's rolling hills and centuries-old kitchens. But there's a reason Italian cooking works so well out here: it's simple, it's built around a handful of great ingredients, and it doesn't ask much of your kitchen. That's exactly the kind of cooking a desert vacation calls for.

Our pantry shelves at JT Trading Post now carry a proper little Italian corner — good pasta, quality canned and jarred tomatoes, real olive oil, and everything you need to make pizza from scratch, dough included. Here's how to turn that into a couple of easy, satisfying meals during your stay.

The Basics: What You'll Find

  • Pasta — dried shapes ready for a quick weeknight dinner or a lazy Sunday sauce.
  • Tomatoes — canned and jarred, the backbone of a good marinara, pizza sauce, or simple pomodoro.
  • Olive oil — including our own small-batch JT Olive Oil, pressed right here from Joshua Tree groves, perfect for finishing a dish or building a sauce from scratch.
  • Pizza dough — ready to stretch, top, and bake, no proofing or kneading required.
  • Pizza-night extras — sauces, toppings, and seasonings to round out the pie.

Pair any of it with our house-made Desert Dust seasoning blend for a little unexpected desert flavor, and you've got a pantry that can carry you through a whole week of easy dinners.

Recipe 1: Fifteen-Minute Pasta Pomodoro

The simplest real Italian dish there is, and one of the best.

  1. Boil pasta in generously salted water until al dente.
  2. While it cooks, warm a few tablespoons of olive oil in a pan over medium heat with a smashed garlic clove.
  3. Add a can of good tomatoes, breaking them up with a spoon, and simmer 10 minutes with a pinch of salt.
  4. Toss the drained pasta directly into the sauce, finishing with a drizzle of JT Olive Oil and fresh basil if you have it.

Serve with grated cheese and you're done — no need for meat or anything fancy.

Recipe 2: Homemade Pizza Night

Great for a group, and easier than most people expect.

  1. Let the pizza dough come to room temperature for about 30 minutes before stretching — it'll be far easier to work with.
  2. Stretch or roll it out on a floured surface into your preferred shape.
  3. Spread a thin layer of tomato sauce, leaving a border for the crust.
  4. Add cheese and your favorite toppings — keep it classic with mozzarella and basil, or go bold with a shake of Desert Dust for a smoky, sweet kick under the cheese.
  5. Bake at the highest temperature your oven allows (450–500°F), directly on a hot pan or pizza stone if you have one, for 10–14 minutes until the crust is golden and the cheese is bubbling.

Let everyone build their own personal pizza for an easy, interactive dinner — great for families or groups sharing an Airbnb.

Recipe 3: Simple Tomato & Olive Oil Bruschetta

A five-minute appetizer while the oven preheats for pizza night.

  1. Dice fresh or canned tomatoes and toss with a generous pour of JT Olive Oil, a pinch of salt, and torn basil.
  2. Spoon over toasted slices of bread rubbed with a raw garlic clove.
  3. Finish with a touch more olive oil and, if you like heat, a dash of Desert Dust.

Why Cook Italian on Vacation

There's something appealing about pairing two very different worlds — the quiet, slow tradition of Italian cooking and the wide-open stillness of the high desert. Both are about doing more with less: a few honest ingredients, a little patience, and no need to overcomplicate things. It's vacation cooking at its best — low effort, high reward, and a good excuse to sit outside with a glass of wine while the sauce simmers.
